3 Layered Almond Bars - by Klaar Mellen

These bars are absolutely delicious! Packed with fiber and healthy fats there are a great snack or dessert. I have to admit, they do take a little bit of time to make but they are an absolute winner!
As this biscuit is made in multiple steps, you can make them during the time you are cooking dinner.
You can experiment with changing up the nut butter or hemp seeds.


First layer: the biscuit at the bottom.

  • 150 gram of almond flower
  • 1 tbsp olive oil
  • 2 eggs
  • 1 tsp of Stevia
  • ½ tsp almond essence


Preheat your oven to 170 degrees. Take a square oven dish (20 cm width) and line with baking paper
Add all your ingredients in a bowl, mix well and add to your oven dish lined with baking paper. Press the mixture firmly and evenly down with a spoon and put in the oven for 13 to 15 minutes or until the biscuits look lightly coloured. Take it out of the oven and let it cool down.



Second layer: nut butter filling.

  • 120 grams of nut butter of choice
  • 1 tbsp coconut oil
  • 2 tsp of Stevia
  • pinch of vanilla powder
  • Optional: 2 tbsp of chopped roasted nuts
  • Optional: 1 tbsp of hennep seeds

Put all the ingredients in a small pan on the stove and stir well until you have a smooth paste that is easy to handle. Smear the nut butter paste on the cooled 

down biscuit and add some hemp seeds and/or roasted nuts. 
Put the biscuit with the nut butter in the fridge for half an hour.

Third layer: chocolate.

  • chocolate

 75 gram of 72% Callebaut chocolate
  • 1 tbsp coconut oil
  • seasalt
  • Optional: 1 tsp of cinnamon or ginger bread spices

    Melt the chocolate with the coconut oil and the spices au bain marie and poor over your nut butter biscuit. Sprinkle some salt on top of the chocolate (don’t forget!).
    Leave about 1 hour in the fridge or until the chocolate is set.
    Cut into small pieces and store in an airtight container in the fridge.
    You will see, these biscuits are absolutely delicious and they will keep you full for a long time.
