Apple Chia Crumble - by Klaar Mellen

As we all love an apple crumble, I have tried to come up with a healthier version, loved by everyone in our family.

This soothing dish is packed with fiber, omega-3's and healthy fats. You can eat it as a snack or as breakfast and I am sure your kids will love it as well! 

You can try to change up the apples with other fruits as it is easy to experiment with.

You need:

  • 4 (bio)apples 
  • 3 tbsp chia seeds
  • 1 tsp cinnamon or gingerbread spices
  • 4 tbsp almond flower
  • 2 tbsp of mixed seeds (sunflower, poppy, pumpkin,..)
  • 2 tbsp of melted coconut oil
  • stevia or brown sugar according to taste
  • optional: handful of raisins

Preheat your oven to 170 degrees.

Cut your apples in small pieces (you do not need to take off the peel) and put it on a small fire with a little bit of water. Add the cinnamon and stevia to the apples and let it simmer for about 5 minutes until they are soft.

In the meantime, make you crumble.

Take a small bowl and mix together the almond flower, seeds, stevia or brown sugar (1,5 tbsp), melted coconut oil and set aside.

Add 100 ml of water to your apples and add in the chia seeds & raisins. Stir well until all the chia seeds are well mixed with the water.

Throw the apples with chia seeds in an oven dish and add the mixture of almond flour and seeds on top of it.

Put it 10 to 15 minutes in the oven or until the top layer is golden brown.

Serve warm or cold with a spoon of Skyr or Greek yogurt.
